Icebox cakes are not a traditional Thanksgiving dessert, but perhaps they should be. These cakes are essentially a pile of whipped cream and cookies—which is a good thing—and require no time in the oven at all, which means you have more room for casseroles.
The filling in this cake is incredibly forgiving, and you can adjust both the pumpkin and the spice to suit your desire for each. Fold in the puree, give it a taste, and add more if you need more seasonal flavor, keeping in mind the cake’s stint in the fridge will mute the flavor some. Pile it high (with gingery cookies) on whatever dish, plate, or pan you have available, then let the whole “cake” chill in the fridge for at least four hours, until the cookies have softened and the cake has become sliceable.
