And the story behind it is actually really sweet, despite its name!
This story may be proof that there is something to that old saying that the only way to a man’s heart is through his stomach. We have all heard about "engagement chicken”, but what about divorce cake?
"Divorce Carrot Cake" is a new viral trend thanks to Reddit. The story behind the post is actually pretty sweet considering it's called Divorce Carrot Cake. Reddit user spider_hugs posted the long-standing family recipe in the r/Old_Recipes forum back in August.
Divorce Carrot Cake - This was my mom’s recipe. Named so because my dad sheepishly asked me to make for his birthday, despite the fact they’ve been divorced for over 20 years. Use a cream cheese frosting. from r/Old_Recipes
As she explained in the post, her dad asked her mom to make him a cake for his birthday. The woman behind the post, who shared her name as Elizabeth with Today, said she was impressed her dad still wanted the cake because her parents have been divorced for 25 years. As she explains, he “sheepishly asked her the make it for his birthday” and she decided to call it Divorce Carrot Cake.
"Some folks seem to think the name implies that the cake will make you get divorced or some other sort of bad juju from naming it as such. I believe the opposite! I find it incredibly touching that my dad remembers something positive about his relationship with my mom," Elizabeth told Today on Monday. "I also made it for my boyfriend when we were first dating, and we just got married on Saturday, so I would say it’s a good luck charm for positive marriage vibes."
This is an adorable story, and the cake is delicious. It's a simple recipe, and Elizabeth says that the cake goes very well with cream cheese frosting—oh, and don't forget a little lemon to give it that extra tang!
