Rainbow Unicorn Cake
Ingredients
- 8 oz cream cheese
- 2 cups powdered sugar
- 2 tsp vanilla extract
- 2 cups heavy whipping cream
- 6 boxes cake mix, in six colors of the rainbow
- Black icing
- Edible glitter
- Skewers
- Fondant
- Star-shaped piping tip
- Sprinkles
Directions
To make the icing, combine cream cheese, powdered sugar and vanilla extract in a medium bowl.
Use a handheld mixer to mix all ingredients well; set aside.
Add 2 cups heavy whipping cream to a separate bowl and beat until stiff peaks form.
Gently fold in whipped cream to icing bowl.
Next, grab some unicorn essence—or fondant.
Mold one piece of fondant into a horn, twist, then skewer.
Mold two more pieces of fondant into ears for listening.
Brush on magic dust AKA edible glitter on the horn and ears.
Bake 6 layers of your favorite cake mix in 6 colors of the rainbow; let cool.
Add a bit of icing on a cake stand, then place 1st layer directly on top. Add more icing on top of the later and all around the sides, then add next cake layer. Repeat this process until all layers are stacked and icing covers the entire cake.
Draw eyes with black icing tube.
Add horn skewer in top center of cake, then add the ears.
Take a star-shaped piping tip and pipe on hair. Then add sprinkles to hair and around base of cake.
