Tell us about you and your history and your place:

“My name is Chris Townsend. I’m the owner of Nancy Jo’s Homemade Bakery here on Oak Island where all our products of Nancy Jo’s are produced here. Today we are making 12 layer chocolate cake. We’ll produce about 70 of those and they’re distributed to the other three locations as well as to Sammy Flowers at Eagle Island Fruit and Produce Stand. I went to N.C. State. My mother started the business about 30 years ago and my sister has always been a part of it. My brother’s always been a part of it. After the pizza business and having my first child, I didn’t want to be doing nights, weekends and holidays. Well here I am doing nights, weekends and holidays. But I wanted a little flexibility in my schedule so my mom said, ‘Why don’t you start making the 12-layer for us?’ So, I started at home three pans at a time making 12-layer chocolate cake. Today we’re baking 24 pans at a time every 7 minutes and turning over about 70 cakes today.”

“My mom is Nancy Jo. That’s whose name is on the door, but she didn’t teach me. My sister did. My sister learned from her and I learned from my sister. My mom is retired and my brother and I run all four locations.”

“My mom said the first 12 layer cakes made by our family for sale were in 1989. We had a little deli in Moore County. She first started selling them at the farmers market in Raleigh in 1995. We moved to our current location at the farmers market in 2002. And the bakery opened here in July of 2013.”

“Our best seller is definitely the 12 layer chocolate cake but I honestly believe it’s for the novelty because everyone’s brother, sister, aunts, uncles, cousins has made one or someone in the family has always made one. To me, our best tasting is the pig picking and the strawberry probably 1a and 1b if it wasn’t for the 12-layer cake.  Around here in Oak Island and Southport, we are really known for our banana bread.
