Soon people will be able to enter Birchwood Mall’s food court and smell delicious wafts of baked goods coming from the mall’s first ever bakery.
Nadine Weaver of Fort Gratiot said pending health department inspections, she hopes to open Peace of Cake bakery in the mall’s former Burger King space either in late September or early October.
Peace of Cake started as a home-based business in 2013 and at the mall will open in a 1,100-square-foot space.
"Quite a bit different from my home kitchen," she laughed.
Weaver, who also works full time for SEMCO Energy Gas Company, has had a retail space in Port Huron in the past. When she was walking through Birchwood Mall this past May and saw Burger King was gone, "I felt very strongly God was saying this was my bakery," she said.
And on June 18 she signed the lease with the mall. Since then she has spent around $10,000 renovating the space with equipment an additional $16,000.
When open, bakery hours will be 10 a.m. to 7 p.m. Monday through Thursday, 10 a.m. to 8 p.m. Friday and Saturday and noon to 6 p.m. Sunday.
There will be custom cake orders that can be picked up, some simple on demand cakes for events, cake pops, muffins and cinnamon rolls. Chef Shell's Restaurant & Catering doughnuts will be offered and a coffee bar will serve beverages.
But the main feature of the bakery will be a cupcake bar that will allow for the "ultimate customized cupcake," Weaver said.
People will be able to choose the cupcake flavor, filling, icing, sauce and candy toppings. An unfilled cupcake will be $2.25 and a filled cupcake will be $2.75. Cupcakes have a two-inch base which Weaver said is the "perfect snack size."
"You could have a different cupcake every time you come," she said.
The mall has granted the bakery special permission to use nearby tables for kids birthday parties where they can decorate cupcakes or cookies, she said.
Weaver wants the bakery to have a "homey and fun" vibe, positive and upbeat, and give families something they can do together while sharing a treat.
"I would love this to be an experience, not just a treat," Weaver said.
Fort Gratiot Community Development Coordinator Sharon Wilton said the cupcake bar will be a great feature and it will be great to see the traffic it can bring to Birchwood Mall.
Fort Gratiot does not have a locally owned bakery outside the major retail store bakeries and this will be a great addition to the mall. Wilton said she’s heard township residents are excited to see Peace of Cake open.
