Real saffron - the red stigma from Crocus Sativus flowers - can cost £7500 for just 1kg. The reason it's so expensive is that each crocus has just three small stigmas that have to be picked carefully by hand. This tiny harvest means that the amount you get from each flower is only around 0.006 grams. It can take 40 hours of tough manual labour to produce just 1kg of high-quality saffron.
