Plum Skillet Cake
Serves 4-6
Have all ingredients at room temperature.
4 tablespoons unsalted butter
¾ cup sugar
1 large egg
½ teaspoon almond extract
1 cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
½ cup low-fat buttermilk
2 ripe red plums, thinly sliced
2 tablespoons turbinado sugar (or regular sugar)
Preheat oven to 375 degrees. Spray a 8” cast-iron skillet with baking spray (or butter skillet and dust with flour. (could also use a 8” cake pan.)
Beat butter and sugar with a mixer until pale and somewhat fluffy. Beat in egg and almond extract.
Whisk together flour, baking powder, baking soda and salt in separate bowl.
Add flour mixture in 3 additions, alternating with buttermilk each time.
Pour batter into prepared skillet; smooth the top. Fan plum slices on the top and sprinkle with turbinado sugar. (nice finishing sugar that leaves crunchy topping).
Bake until golden brown and toothpick inserted into center comes out clean, approximately 30-35 minutes. Let cool slightly. Delicious with vanilla ice cream!
