Nothing Bundt Cakes coming to Peoria. Meet the woman behind the bakery - Peoria Journal Star

A new bakery is set to open at The Shoppes at Grand Prairie.

Nothing Bundt Cakes is a business with bakeries in over 40 states and Canada, but right now, the closest location to Peoria is in Bloomington.

The bakery’s exterior signs, with bright blue lettering and a decorative flower, were recently installed. For franchisee Laura Glossop, it is an exciting step toward opening.

“I wanted to open yesterday, you know. It can't really come soon enough,” she said. “We’ve been looking at a blank slate for so many months, and now it's, you know, the signs are up and now it's kind of real.”

For Glossop, this business venture follows years spent in the medical field, rather than a commercial kitchen. She hopes to open Nothing Bundt Cakes in early November but said the official date will be based on how setup goes in the coming weeks.

Nothing Bundt Cakes offers 10 different flavors. These include classic vanilla, chocolate chocolate chip, white chocolate raspberry, strawberries and cream, confetti, carrot, snickerdoodle and lemon. The store also offers a chocolate chip gluten-free option.

The final cake is a seasonal flavor. The current option, pumpkin spice, is available from Sept. 12 through Dec. 4.

Glossop said one of her friends became especially excited about the Peoria location’s opening a new flavor was announced for the business.

“He sent me a text message with the pumpkin spice and said, ‘I'm gonna need you to open soon, so I can have one of these every day,’” Glossop said.

Nothing Bundt Cakes offers different frosting styles, cake decorations and multiple cake sizes. These include single or tiered Bundt cakes, individual Bundtlets and small Bundtinis.

A plain 8-inch Bundt cake is $28, while it is $38 for a decorated cake. A 10-inch undecorated cake is $38, with the decorated costing $48. The tiered Bundt cake is $78, a single Bundtlet costs $5.25 and a dozen Bundtinis are $25.

Glossop said customers can order the cake ahead of time or order in the store. Either way, she said all the cakes are made fresh in the store.

“So, if you walk in and you get to have the smell of a fresh baked cake,” she said.

Customers who sign up for Nothing Bundt Cakes’ eClub can get a free Bundtlet for their birthday, Glossop said. In the front of the business, a “Bundt'ique” shop might include cards, mugs or small gifts.

How she got into the cake business

Before opening Nothing Bundt Cakes, Glossop was in the medical field. She said she worked in the cardiac catheterization lab and then in the medical device industry. However, she said COVID-19 shifted her career path.

“I was actually working more of in a per diem position early part of 2021,” she said.

Starting to operate a business was more of her fiancé’s idea, Glossop said. She said his family has worked in the restaurant and franchising industries.  

Glossop said working per diem gave them the opportunity to explore the idea of owning a business more closely than before.

Initially, Glossop said her fiancé imagined the business as serving a different menu item – hot dogs. Glossop, however, decided to pursue a different business opportunity.

“I was like, well if I'm gonna have to be the person probably running this business - just kind of off the cuff I said Nothing Bundt Cakes,” she said.

For Glossop, inspiration came from seeing the cakes at the hospital or when visiting family. She said wanted to open a shop which would put a smile on people’s faces – and she thought the cakes fulfilled that job nicely.

The initial investment required to operate a Nothing Bundt Cakes franchise location can typically cost between $483,600 and $699,700, according to the company's franchise page.

To prepare for the new career path, Glossop said she traveled to Texas for in-person, hands-on training for roughly a month.

"It's real life," she said. "It's what you're gonna be doing, which was great."

Glossop hopes to look for staff in the coming weeks, seeking staff for all positions – from management to guest services to bakers.

With work on the building progressing and a positive response from the community so far, Glossop said she is excited for the day she can Nothing Bundt Cakes, 7528 N. Grand Prairie Drive, Suite B.

“I'm just glad to be a part of the community,” Glossop said, “and I think it will be nice for the community and outlying communities of Peoria, as well.”
