And I wasn't disappointed.

Of course you know we love all things cooking over here at Allrecipes, and you might have also gleaned by now that we appreciate a store-bought shortcut every once in a while. Especially when we find unexpected treats released at Costco to save us time in the kitchen when we're running between barbecues and summer pool parties. So when we caught wind of a rumor that there was a new Raspberry Lemon Rose Bundt Cake, we had to investigate.

I ran to my local Costco but couldn't find the cake. Turns out, the rose-shaped Bundt from Bakery Street is only available on the West Coast as of now (I probably should have done a little more research first but, tbh, I'll take any excuse to run to Costco). Firmly planted in the eastern half of the country, I was out of luck. That was until I saw a case of pink swirls that caught my eye while wandering in the bakery section wondering what to do next.

The Return of Costco's Mini Raspberry Cakes

The appetizing pink swirls that grabbed my attention were mini raspberry cakes with buttercream frosting. A 6-pack for $9.99? I had to bring them home and give them a try. If I couldn't get the raspberry Bundt, this seemed like a good consolation prize.

After some digging, I learned that Costco introduced these last year, though they seem to be a seasonal treat. Some Reddit users on the r/Costco threads were quick to celebrate, saying "Ooh I was waiting for these to come back! It’s the best of the mini cake flavors" and "How could you NOT buy them?" While others aren't as enamored, posting "We tried them once. Not enough raspberry" and "They are good, but I couldn't finish them. They are super sweet."

Costco Mini Raspberry Cake Taste Test

Heading into a weekend, I was happy to have an easy new dessert to share with family. These "minis" are quite big, like giant cupcakes. I couldn't possibly take on this pack alone. The white cakes have raspberries baked inside and are topped with raspberry frosting and white chocolate shavings. They certainly look the part of summertime decadence.

The cake texture is soft and light and the raspberry flavor is fresh. But two bites had me maxed out on sweetness—as many have pointed out. I would happily share my mini with three to four people. It was a good, quick dessert, though not on the level of greatness with other Costco favorites. On my next trip back, I'll try the lemon blueberry loaf or something refreshing from the freezer.

And in the meantime, I'm still waiting on Costco to bring the Raspberry Lemon Rose Bundt Cake my way.
