Ingredients
- 1 cup sugar
- ¾ cup butter, softened (one and a half sticks)
- 1 cup ricotta cheese
- 3 large eggs
- ¼ cup lemon juice (from one large lemon)
- 1 tablespoon lemon zest (from one large lemon)
- 1 ½ cups all purpose flour (203 grams)
- 2 teaspoons baking powder
- ½ teaspoon salt
- 9 x 5 inch loaf pan
Prep Time: 10 minutes — Cook Time: 1 hour — Total Time: 1 hour 10 minutes — Servings: 12
Lemon Glaze
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- ½ teaspoon lemon zest
Instructions
- Preheat oven to 350 degrees. Spray a 9 x 5 inch loaf pan with cooking spray then line with parchment paper; set aside.
