FAIRBANKS, Alaska. (KTVF) In this week's episode of 'The Quarantine Kitchen' we tackle gingerbread cake. This recipe comes from West Valley senior Sophia Benson.
The Quarantine Kitchen Episode 5 Gingerbread Cake (May 1, 2020/ KTVF)
"Mostly for me I kind of make a comfort food. I baked a few times while in isolation," said Benson. "It's not super sweet which is kind of what I like about it. You can just kind of have it and it's pretty easy to make."
Here is the ingredients list:
Dry Goods:
-2 cups of all-purpose flour
-1 teaspoon of baking soda
-1/2 teaspoon of baking powder
-1/2 teaspoon of salt
-1 1/2 teaspoons of ground cinnamon
-1 1/2 teaspoons of ground ginger
-1/4 teaspoon of ground cloves
-Zest of 1 orange
Mixing Bowl:
-1/2 cup of butter
-1/2 cup of brown sugar
-1/4 cup of white sugar
-2 large eggs
-1/2 cup of molasses
-1 cup of milk
Icing:
-1 1/2 cup of confectioners sugar
-3 tablespoons of orange juice
Step 1:
Whisk the flour, baking soda, baking powder, salt, cinnamon, ginger, cloves and the zest of an orange.
Step 2:
Mix the butter and the sugars until it is creamy. Then add one egg at a time, beating each one. Then add the molasses.
Step 3:
Alternate between the dry goods and the milk, mixing in both.
Step 4:
Mix those, and then pour it into a square pan. Then bake at 350 degrees for 30 to 35 minutes.
Step 5:
Next we make icing with the confectioners sugar with the orange juice and spread it on top of the cake.
Step 6:
Now enjoy.
