This raindrop cake is baffling Houstonians

Bellaire cafe makes Instagram-worthy desserts

At first glance, the rain drop cake is absolutely mesmerizing. It's squishy, supple, and you just want to poke it with your spoon. The consistency is far from a traditional cake, but more of a firm gelatin sitting on your plate.

The Bep in Bellaire, located at 8300 W Sam Houston Parkway, debuted the Instagram-famous "rain drop" cake in late December when they first opened shop. The aesthetically pleasing treat has been liked and shared all over social media.

Water mixed with Agar, a gelatin-like substance that comes from algae, brings the giggly rain drop to life. The only calories come from the brown sugar syrup and soy bean powder that give it flavor.

Owners Tracy Nguyen and Tina Nguyen put their own twist on the Japanese cake by adding organic butterfly pea flowers for presentation and health benefits.

"I wanted to make something that was pretty and healthy, the flower can help reduce cholesterol" Tina Nguyen said.

The cake is made by bringing water to a boil, followed by the Agar powder. The mixture is then poured into a round mold, refrigerated for about two hours and then voila, it's done. No baking needed.

In fact, all of the tasty treats on the menu are organically flavored and dyed.

"We want the best for our customers so we've never used artificial sweeteners in our desserts,"  Nguyen said. "I put all of the ingredients on display so they can see how we make everything in house."

Fruit infused mojitos, matcha crepe cake, and fresh teas that are brewed every four hours are just a few of the items carefully crafted by Tina and Tracy.

"We traveled all around Asia to meet our vendors and learned how to make our teas straight from the source,"Tina Nguyen said. "We even went to Mexico to learn how to make the mojitos."

Just like the rain drop cake, it's clear that Tina and Tracy pour their passions and ideas into their desserts.
