How to Make a Watermelon Cake - Our Community Now at Colorado

We've all seen watermelon baskets overflowing with fruit, but have you ever tried making a watermelon cake?

This simple craft is a fun way to make the most of this summertime favorite. Start by finding a nice, big watermelon. You want one that looks heavy for its size, with a white spot and a somewhat oblong shape.

You can decorate it with any kind of fruit, but think about what's in season and cut larger fruit slices into fun shapes like stars and hearts. Be careful of fruit that browns easily, like bananas, if the display has to sit for a while. When going for color contrast, these are some the most striking fruits to use:

  • kiwi slices
  • banana slices
  • blackberries
  • cherries
  • blueberries
  • honeydew or cantaloupe
  • pineapple

Cut the ends off the watermelon, then cut it in half along its center (not length-wise). Carefully trim off the green and white rind and form two layers for your cake, one smaller than the other. I like to make big, bold cuts to make octagons first, then shape them into rounds. Set your two layers on a platter, as if it was an un-iced cake. If you need a little more height, use one of the ends as a green base layer.

Cut up the trimmed sides of the watermelon into bite-sized pieces and arrange them on the sides of the platter. Decorate your watermelon cake with berries, fruit slices, and edible flowers. If you need to move your creation, you should attach the decorative fruit with toothpicks first. 

Some people like to frost the cake with Cool Whip or whipped cream, but it makes it much more difficult to decorate and transport. Whichever method you use, you should definitely try making your own watermelon cake this summer. It's a definite crowd pleaser!
