This Simple Hack Will Help You Get Flat Cake Layers Every Time - The Kitchn

When I was growing up in the South, there were a few “house rules” us kids had to follow when the adults were cooking and baking in the kitchen. Rule one, don’t open any outside doors for fear of letting the smell of the “outside” into the kitchen and into the food. Two, no running or making any loud noises around the kitchen to prevent the cake from falling while it’s rising in the oven. And lastly, always drop the cake pans on the counter before putting them into the oven to get rid of any bubbles left in the batter. This last rule, however, is more of a hack, and is very similar to one posted recently to Jocelyn Delk Adams of @Grandbabycakes’ TikTok account. 

Her baking hack is useful for anyone looking to make perfectly flat cake layers, and it’s a very simple one. After removing the cake from the oven, simply hold the pan a few feet above the floor. Now just release the pan, letting it drop to the floor and thus flattening the cake and releasing any air trapped inside.

Now I’ve got to admit that this action seems a bit unorthodox, because dropping your cake on the floor sounds more like a mistake than it does a baking hack. However, I must also admit that this hack looks kind of fun, and I’m willing to try it for myself with my next baking venture.
