When Prince Harry and Meghan Markle selected London’s trendy Violet Bakery Café to prepare the cake for their upcoming nuptials, they chose a springy elderflower-and-lemon creation. With that, expect to see elderflower turning up in everything from baked goods to cocktails this year.

Elderflower is: the blossom of the elder tree, harvested for just a few weeks every spring and used to make prized St-Germain French elderflower liqueur.
Qualities: sweet, floral, fruity, perfume-y with notes of peach, grapefruit and pear
Uses: cocktails (often simply paired with Champagne), baked goods, custard, tossed with berries for a simple dessert

Ingredients
- 1 oz Cazadores blanco tequila
- 1 oz kaffir-lime-infused St-Germain French Elderflower Liqueur (see note)
- ¾ oz Noilly Prat Dry vermouth
- ¼ oz fresh lime juice
- 5 dashes Chartreuse
- Kaffir lime leaves, for garnish
- Elderflowers, for garnish (optional)
Directions
Combine all ingredients in an ice-filled cocktail shaker. Shake and strain into a coupé glass. Garnish with kaffir lime leaves and, if using, elderflowers.

Kaffir lime leaves have a perfumed quality that complements elderflower nicely. You can find fresh or frozen kaffir lime leaves at Asian groceries or order them from amazon.com. You’ll need to steep kaffir lime leaves in St-Germain French elderflower liqueur for 3 days.
