Yolanda Gampp is a cake magician. I can’t stop watching her YouTube channel How to Cake It, which has almost 3.5 million subscribers. I don’t use the term “jaw-dropping” very often, but these cakes are crazy and fun: Giant Candy Cane Cake, Grilled Cheese Cake, Sushi Cake and even a Stranger Things Waffle Cake.
Toronto-based Gampp, who goes by Yo and is often called “The Beyonce of Cakes,” is approachable and fun, and so is her loyal fan base of YoYos.
In addition to her YouTube channel, Gampp now has a cookbook, “How to Cake It: A Cakebook” ($29.99, William Morrow Cookbooks), where she shares recipes and step-by-step instructions for making crazy cakes.
• FRIED CHICKEN AND WAFFLES: She says the Fried Chicken and Waffles cake is actually one of the easiest and least intimidating cakes, so start with that one. The “fried chicken” is made of pretzel sticks and puffed rice cereal, and you cook the cake in an actual waffle iron.
• TACOS: The taco cake recipe uses real flour tortillas that are sweetened with cinnamon, chocolate “cheese,” dyed coconut chips for lettuce and diced red licorice for tomatoes. And don’t forget the buttercream guac.
• PIZZA SLICE: Gampp says this project is perfect for beginners or supervised kids, and helps teach the basics of cake carving and fondant work. Go to the licorice again for toppings that look like bacon and olives, and caramelize the crust with a brulee torch.
