Mountain of a cake serves as 80th Anniversary Celebration centerpiece

Creating a replica cake for the 80th anniversary celebration at Wilmot Mountain Saturday was literally a tall order.

“I didn’t hesitate,” Robin Shiels, owner of Robin’s Nest Cakery in Kenosha said about being asked to make the custom centerpiece. “I love a challenge, and I’d never carved a mountain out of cake.”

She did create a garbage disposal cake for Insinkerator, a cake in the shape of a Nike gym shoe and even a cake shaped like a toilet. But never a ski slope.

Shiels visited Wilmot Mountain Thursday for inspiration before getting to work in her bakery at 621 56th St.

The 28-inch-by-54-inch replica of Wilmot Mountain took roughly 20 hours to complete once she got started.

“It was going to be bigger, but it wouldn’t go through the door,” Shiels said.

It is not as tall as a seven-tier wedding cake she made. But it is the largest cake overall she has made since she started the business in 2009.

Nine large sheet cakes were used to form the mountain. The piece also includes several buildings, the iconic arched tunnel entryway, chairlifts, snow-making equipment, light poles, the terrain park apparatus and the retired snowcat machine near the pond.

“It’s not often you get to make something so detailed,” Shiels said, adding that she used photographs and her edible sugar printer to make a replica plaque that pays tribute to the original owners of the property and the lifelike signage pieces.

The other elements were created using fondant and modeling chocolate. She said the chairlifts posed the greatest challenge but were also the most fun to make.

In addition to the cake, Shiels made 250 cupcakes for the celebration.

“The cake is edible, but it is more of a show piece,” she said.
