In an invitation-only party earlier this month Baker’s Station held its first annual wedding cake tasting event in the Waterhouse Restaurant in Peterborough.
“The point of this is to be able to introduce people to what we are capable of doing for weddings, for parties, for receptions,” bakery manager Keith Herrick said. “This is the first annual, so we’ll do it again.”
The four cakes on display at the tasting were inspired in their decoration and flavors by the seasons of the year, he said. “I thought, New Hampshire is famous for our seasons, so we should take this right through the seasons.”
Inspired by one of its bakers, Herrick said, Baker’s Station is amping up its wedding cake production from about 40 in total last year to 40 cakes a month in 2020.
“We never really did a lot of cakes at the bakery prior to this,” Herrick said. “I am a great baker and I love to do pastries, but I hate making wedding cakes. The stress was just too much for me to manage when I had so many other things to do.”
But when baker Amy Niles came on staff about a year ago her expertise in wedding cakes and her love of it was evident.
“It was a natural progression from where we were to where we wanted to move,” he said. “Being able to change it and to watch it grow from maybe doing one or two cakes a month to doing 6 or 7 cakes a week. And each time one of those cakes goes out, number one, I know it’s beautiful and number two, I know that the cake itself tastes amazing.”
At her previous bakery, Niles was creating 50 to 60 wedding cakes a week.
“I have been doing this for a long time. I worked at a bakery in Rhode Island,” Niles said at the event. “I really love doing the cakes.”
Niles is also great with clients when it comes to helping them design their wedding cake, Herrick said. A lot of the clients come in without a specific theme in mind, he said.
“A lot of the brides nowadays are looking for something beyond a cake,” Niles said. “Either they don’t want a cake at all or they want something beyond it – they want an entire table or they want an option that’s gluten-free or vegan. So we have a lot of options for them. We can make the cake gluten-free or we can do a vegan pie.”
“She’s amazing. She’s elevated us. I can’t even tell you how much,” he said.
Baker’s Station offers cake tastings for $25. So you can have a private sampling of the different combinations of cakes such as white, chocolate and spice as well as the various icings so you can determine whether you want American or Italian buttercream.
“So you get a sample of several different types of cakes and frostings,” Herrick said. “And if you book with us we take $25 off the cake price.”
