This week's recipe comes from the worst year of the Great Depression: 1933. It's a one-egg cake from “All About Home Baking” published by General Foods.
Someone is bound to have a birthday during the age of social distancing and self-isolation and will need a cake to celebrate. This isn't a fancy cake, nor does it pretend to be something it isn't. It is just a plain, white vanilla cake that is simple enough to make and doesn't take many ingredients.
You will need:
- 1 ¾ c. all-purpose flour
- 2 tsp. Baking powder (not baking soda!)
- ¼ tsp. Salt
- 4 tbs. Softened butter, margarine or shortening
- 1 c. sugar
- 1 egg, unbeaten
- ¾ c. milk
- 1 tsp. Vanilla.
Sift together the flour, baking powder and salt into a bowl. In a separate bowl, cream together the butter and sugar, adding sugar in increments. This is best done with an electric mixer, but can be done by hand by working it against the bowl with spoon or spatula. Do this until it is very light in color and fluffy. Add the egg directly into the creamed butter and beat vigorously until the mixture is light and smooth. Add the flour, alternating with milk, in small additions. It is best to start and end with flour to prevent clumping. Add the vanilla and mix in. Pour into a well-greased 8x8 cake pan or two 9” rounds. Bake at roughly 335 degrees for 35-45 minutes.
Note about this recipe: This recipe was printed when temperature cooking was just coming into play. The recipe suggests to cook this in a “moderate oven” or about 350 degrees for nearly an hour. I tried this method and it gave me a very well-done cake. You can definitely make this cake without the aid of an electric mixer, but be prepared to have very tired arms by the end.
This can be made into a chocolate cake with a few adjustments.
- 1 ¾ c. all-purpose flour
- 2 tsp. Baking powder
- ½ tsp. Salt
- ½ c. butter, margarine or shortening
- 1 c. sugar
- 1 egg, well beaten
- 2 ounces unsweetened baking chocolate or semi-sweet chocolate chips, melted
- ¾ c. milk
- 1 tsp. Vanilla
Sift together the flour, salt and baking powder. Cream together butter and sugar as in above recipe. Add the egg and beat well then add the chocolate a slowly as to not cook the egg. Add flour and milk in same method as above recipe. Add vanilla. Bake in 8x8 pan at 325 degrees until done.
Here's a recipe for a mock whipped cream icing:
- 1 c. milk
- dash of salt
- 4 tbs. Flour
- 1 stick margarine
- ½ c. Crisco
- 1 c. sugar
- 1 tsp. Vanilla
Cook flour, salt and milk until thickened. Set aside to cool completely. Beat together sugar, margarine and Crisco until creamy. Beat in flour mixture. Add vanilla and beat until fluffy.
