Buddy Valastro is leveling up his reality television game.
This November, the pastry chef is premiering two new shows on A&E: Legends of the Fork and Buddy Valastro’s Cake Dynasty. While the former showcases Valstro traveling the country to explore iconic restaurants, the latter goes behind the scenes of his Carlo’s Bakery business and family life following his TLC Cake Boss fame.
Valastro and his wife Lisa share four kids: Sofia, 20, Buddy Jr., 19, Marco, 16, and Carlo, 12.
“Cake Dynasty is where my life is now, it's 14,15 years later. My kids were babies at the time. Now they're all older and starting to come into the family business,” he tells PEOPLE of the new series.
He adds: “So there's the succession part of the business…we don't just make cakes, we have 14 bakeries and seven or eight restaurants and food concepts, 75 vending machines…So it's less about making one giant cake, it's more about how do you make 18 cakes a minute and stuff like that.”
With that expansion comes added pressure – including some healthy cursing.
“It's definitely a more grownup version. We're a little bit more real and raw. So sometimes there's a couple of F bombs here and there,” he says with a laugh.
This realness is a big reason why he decided to go with A&E this time around.
“Honestly, that's why I was interested in doing it with [the network] because they really wanted us to be who we are. Sometimes we curse, sometimes we yell, sometimes we scream, sometimes we hug, sometimes we laugh, sometimes we play our prank,” he says. “They really wanted to deal with the authenticity of who we are as a family and the dynamic, and that's the truth.”
Valastro says he mostly kept his kids off camera and out of the spotlight when they were younger, but now they’re “at an age where they want to be part of it.”

In fact, some of the most heartfelt scenes from the new show include everything from funny moments with Valastro teasing Sofia’s boyfriend to his eldest son deciding on where to go to college.
“The dynamic between my wife and kids and myself I think is not only fun, but I think there's a lot of parents who are all in the same boat. You have teenage kids and they're growing up, what are they going to do? How are they going to do things?” he says. “So I think there's a lot of relatability as well about that.”
