Mimi Kaufman of Salem isn’t starting a bakery. But she also wasn’t quite ready to give up the flagship red cake dessert at the Wagon Wheel, the restaurant she has owned alongside her sisters.
The Wagon Wheel is closing its doors, but fans of the colorful dessert will be able to continue ordering whole cakes, Kaufman said this week.
“When we announced the restaurant closing, we had a lot of people calling for red cakes to go,” she said. “People were disappointed that we had stop taking orders and that the supply was down. So I spoke with my sisters and said, ‘This is something we need to keep going.’”
Wagon Wheel staff began serving the red devil’s food cake in the 1980s, Kaufman said.
“When I was about 21, our prep cook quit and my Dad had me doing prep work,” she said. “At that point, we were making our own pies and desserts, and it was something different to throw in there.”

Kaufman said it sold well alongside the restaurant’s other desserts, but has really taken off in popularity over the past two decades.
“I’m out of a job, so I figure, this is what I’m going to do for now,” she said. “We talked to our supplier, and we’re going to do limited times and see how this goes over.”
In less than 24 hours, Kaufman’s post announcing the continuation of the cake garnered more than 650 likes on a Facebook page.
Customers can call the Wagon Wheel at 724-468-8189, to order “Our Famous Red Cake.” The cost is $30 for a whole cake — slices will no longer be sold.
Order hours will be from 8 a.m. to noon, Tuesday through Saturday. Pickup will be at the former Wagon Wheel, 6012 Route 22 in Salem.
“This could change depending on how everything goes,” Kaufman said. “Eventually I’d like to have a day to do some evening hours. But we’ll see.”
