Donna's maple walnut cake

This is a moist, subtly sweet cake with a wonderful nutty texture.

  • 6 ounces (1 cup) chopped dates
  • 1/2 cup boiling water
  • 1-3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/4 cup canola oil
  • 4 tablespoons melted butter
  • 3/4 cup maple sugar
  • 2 teaspoons apple cider vinegar
  • 1 tablespoon vanilla
  • 1-1/2 cups walnuts

Optional glaze

  • 2 tablespoons maple syrup
  • 1 teaspoon apple cider vinegar
  • 3/4 cups powdered sugar
  • water - if needed to thin the glaze

Preheat oven to 325 degrees. Butter a 9 x 13 inch baking pan. 

In a small bowl, combine dates and boiling water. Set aside. 

In a large bowl, combine flour, baking soda, and salt. Stir to mix. 

In a small food processor, combine egg, oil, melted butter, maple syrup, vinegar, vanilla, and date/water mixture. Process until smooth. Add walnuts and process until walnuts are chopped. Pour mixture into bowl with the flour. Stir until well mixed. Pour into baking pan. Bake for 25- 35 minutes or until center is set.
