Ingredients:
2/3 cup butter softened
1 3/4 cup sugar
2 eggs
3 cups cake flour, sifted or see note below for substitution
2 1/2 tsp baking powder
1/2 tsp salt
1 tbspn grapefruit zest
1/2 cup grapefruit juice squeezed from grapefruit
3/4 cup milk
1 1/2 tsp vanilla
Directions:
Preheat oven to 350. In a separate bowl, combine the sifted flour, baking powder and salt. In large bowl, cream butter and sugar in mixer and blend well. Add eggs one at a time and beat after each addition. Add flour mixture to butter mixture alternating between grapefruit juice and flour. Begin and end with flour mixture. Gradually add milk mixed with zest and vanilla.
Pour into greased and floured bundt pan and bake at 350 for 45 – 50 minutes.
Note: If you do not have cake flour, then you can make your own by sifting 2 Tbsp cornstarch into 1 cup of regular flour.
