Belvidere cake shop opens on Buchanan Street

BELVIDERE — Erica Koren, a Harlem High School graduate, is tired of hearing “the party was great but the cake was awful.”

She hopes to reduce such opinions with her new business, Erica Koren Cakery, at 107 Buchanan St.

Koren will host a grand opening from 11 a.m. to 2 p.m. Saturday. She’ll offer cupcakes in six flavors: s’mores, dark red velvet, blueberry maple, raspberry vanilla, double dark chocolate, and salted caramel chocolate.

“This is a way that they can come in without any sort of commitment,” Koren said.

Koren worked five years for Chrysler to pay off student loans so she could open her new business.

After she graduated from Harlem, she attended the Blackhawk Technical College in Janesville, Wisconsin. She also sought French pastry training and worked for a catering company and cake shop before deciding to join the corporate ranks.

Koren said she’s made all sorts of cakes for different occasions. She said those who try her cakes will notice flecks of real vanilla beans.
