Hummingbird Cake

Dry Ingredients:

3 cups flour

2 cups sugar

1 tsp salt

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

1/2 tsp nutmeg

Wet Ingredients:

3 eggs

1 cup oil, vegetable

2 cups bananas, mashed

2 tsp vanilla

8 oz crushed pineapple with juice

Directions:

Mix the dry ingredients in a large bowl. Then mix wet ingredient in a bowl. Pour the wet ingredients into the dry and mix just until moist, batter will be lumpy not smooth. Batter will fill 3 8 inch rounds. Bake at 350 degrees for 20-30 mins.

Cream Cheese Frosting:

2 each 8 oz pkg of cream cheese, room temperature

1 cup butter

4 to 4 1/2 cups powder sugar

2 tsp vanilla

1/2 tsp lemon juice

Cream the butter and cream cheese until smooth. Next add vanilla and lemon juice, then add powder sugar 1/2 cup at a time until you get the consistency you are looking for.
